Healthy Oatmeal Coconut Pecan Cookies
for your Sweetheart!
1 1/4 cups raw sugar
1 cup Coconut oil (the solid kind)
2 tsp. Vanilla
1 tsp Baking soda
1 tsp Baking Powder
½ tsp. Salt
1 ½ cups flour
!/2 cup shredded, sweetened coconut
½ cup pecans
1 cup Quick Oats
Preheat oven to 350 degrees.
In a large bowl cream together the sugar, eggs, coconut oil and
vanilla until light and fluffy.
Add the dry ingredients and mix until combined.
Drop by tablespoonfuls onto a cookie baking sheet.
Bake at 350 degrees for about 9 minutes until the
cookies are set but not overly browned.
These are delicious.
You can also make these with the traditional brown and white
sugar and white flour and they are great even with chocolate chips.
Now to make them into heart shapes just nest three cookie dough balls together as in the picture above and they bake beautifully into happy sweet-hearts 🙂
